Conserve is the result of a food manipulation process in such a way that it prevents or slows down its decay (loss of quality, edibility or nutritional values). This tends to be achieved by avoiding the growth of natural pasture, yeast, fungi and other micro-organisms, as well as oxidation of fat which provoke its rancidity. Many conserve elaboration methods include diverse storage techniques for the conservation of food.

An important aspect to preserve food is to keep or improve nutritional values, texture and taste.
